Fudge Cake

This indulgent yet totally portable fudge cake is everything you desire in a make-and-take cake.

The recipe is excerpted from entertaining specialist Elizabeth Heiskell’s cookbook What Can I Bring? Elizabeth states that when her mom discuss this fudgy cake, her eyes glaze over. The cake was sold at the Lowry Motor Court dining establishment in Greenville, Mississippi. Mama said they showed it by the register under a glass dome, and each perfectly square piece was neatly covered in wax paper.

Active ingredients
1 cup saltless butter

4 (1-oz.) squares semisweet baking chocolate, carefully sliced

1 3/4 cups granulated sugar

4 large eggs

1 cup all-purpose flour, sorted

1 cup chopped toasted pecans

1 tsp. vanilla extract

Directions
Prepare oven and pan:
Preheat oven to 300 ° F. Coat a 9-inch square pan with cooking spray. Line bottom and sides of pan with parchment paper, permitting 4 to 5 inches to extend over sides. Coat parchment paper with cooking spray.

Melt chocolate:
Place butter and chocolate in a large microwave-safe bowl. Microwave on HIGH till entirely melted, about 1 minute, stirring every 20 seconds.

Sugarcoat and eggs:
Add granulated sugar, and stir until well integrated. Cool 10 minutes. Include eggs, 1 at a time, and stir till mixed after each addition.

Include staying ingredients:
Fold in all-purpose flour and salt. Stir in sliced toasted pecans and vanilla extract.

Include batter to pan:
Put cake batter into prepared pan.

Bake cake:
